1. Assignment: As a group, you will submit an essay contrasting the
preparation/manufacture of a food at an individual scale and at a large scale that you
define. Possible examples: eggs, curry, milkshakes, pizza, dumplings, laksa, or duck.
2. Format: The format of the assignment is flexible, but your essay must be an original
piece of considered discussion/argument backed up with facts and references. The
essay should be no more than 2000 words in length. Because a purpose of this
assessment is for you to consider what changes as you work at a larger scale, you
must specifically identify the most significant differences and back them up with
references. Your essay must not be just a list of traits but an overview of a process
you have assembled from case studies, trade journals, and/or scientific journals. Think
about all the steps needed to prepare a food or dish then consider how easy or hard
that becomes, as you scale up, to achieve the same quality outcome.
3. Assessment criteria:

*Note on references:
1. All references cited in the body of the essay must be listed in the reference list.
2. Only list the references that have been cited in the body of the essay.
3. There are many styles for citing and listing references. All are acceptable in the
scientific community. Your best guide is to consult the “Instruction for Authors”
section in any food science and technology journal, like Food Science or Food
Technology. Once you have chosen a particular style, use that style consistently for
all the references. Your references do not count in the word count!
